		<description>Jason, I think you have to go hunt for them. It would be nice though if wild mushrooms were available at the harvest market. But I guess there are a lot of things we wish for the harvest market: artisanal cheese, wild mushrooms, hmmm...lapin?</description>

		<description>People who are selling them of course want to make them sound like truffles or something, so you have to take their acclaim with a grain of salt. Really it's a matter of preference and availability. If the champignon de paris (button mushrooms) were not so easily cultivated, it might be at the top of the charts. That said, morels are always on the list of people's favorites, along with cepe, chanterelle, etc.

It is an excellent mushroom, with a unique flavor, shape, texture and form, which all count for something. The flavor is not an overt one in the way that cepe, for example, pronounces itself in a loud way. Rather, it sort of haunts the periphery of your taste buds and comes across as subtle and sophisticated.

They should be eaten once a year.</description>
